Improving the Quality of Livestock Products
British and German scientists found that feeding alfalfa extract rich in polyunsaturated fatty acids to cattle can increase the content of long-chain n-3 fatty acids such as conjugated linoleic acid, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) in beef. The experimental grouping scheme was as follows: 1) straw and concentrates group (S-CC); 2) straw, concentrates and 2 000 IU VE/kg alfalfa extract group (S-PXC); 3) green storage feed group (GS); 4) green storage feed and 75 g alfalfa extract/kg hay group (GS-LPX); and 5) green storage feed and 150 g alfalfa extract/kg hay group (GS HPX).
Supplementary feeding of alfalfa extract with concentrates and silage increased the n-3 fatty acid content of tenderloin and had a significant (P < 0.05) favorable effect on the ratio of n-6:n-3 polyunsaturated fatty acids without adversely affecting the organoleptic quality of the tenderloin.
