Antioxidant

The multiple conjugated double bonds in the molecular structure of beta carotene can effectively scavenge free radicals and inhibit the production of lipid peroxides in cells. It reduces the damage of free radicals and oxidation products on retinal epithelial cells. Unlike other carotenoids, the antioxidant effect of β-carotene is reversible.
