무 Red Colorants 란?

Radish red colorant is extracted and refined from the tuberous roots of the red radish of cruciferous plants. It shows red to deep red powder, easily soluble in water, the solution is red to reddish purple. It is acid-resistant (pH2.0-5.0) with good light and heat stability, and its hue changes from red to reddish-purple with the rise of pH. Under the condition of heating at different temperatures, with the increase of heating time, the color of radish red pigment fades insignificantly, indicating that radish red pigment has good thermal stability. Radish red colorant powder can be widely used in red vinegar, jam, candy, fruit, and vegetable juice (meat) drinks, prepared wine, jelly, and other fields.

Radish red colorants are bioflavonoids, and the most important physiological activity of flavonoids is free radical scavenging and antioxidant capacity. Research has proved that: Radish red pigment anthocyanin is the most effective antioxidant discovered by mankind today, and it is also the most powerful free radical scavenger, the antioxidant performance of anthocyanin is 50 times higher than that of VE, and 20 times higher than that of VC.
