    귀리 베타글루칸 분말은 식물 귀리에서 공급받은 수용성 식이섬유로, 안전하고 먹을 수 있다.전분, 단백질 등 물질의 소화와 흡수를 방해하는 점성성질로 인해 인체에 유익한 생리기능을 가질 수 있다.귀리는 주로 유과와 내과로 구성되는데 과피, 씨코트, 덱스트린, 부덱스트린으로 싸여있다.귀리 베타글루칸은 주로 그것의 씨앗 알갱이의 endosperm cell wall에 위치하며, 하위 덱스트린 층에도 많은 양의 응집체가 있다.

     

    귀리 베타글루칸은 귀리겨에서 추출된다.현재 국내외에서 일반적으로 사용되고 있는 귀리 베타글루칸 추출 방법은 물 추출, 알칼리 추출, 산 추출, 초음파 추출 등이 있다.가장 일반적으로 사용되는 방법은 불용성 글리칸을 제거하기 위한 약한 물 추출, 전분을 제거하기 위한 아밀라아제 첨가, 단백질을 제거하기 위한 등전점 강수, 마지막으로 순도가 높은 수용성 귀리 베타글루칸 분말을 알코올 분해에 의해 얻는다.귀리 β의 수율-glucan 귀리 bran에서 4%에 관 한 것이었다.

    Reduces Cholesterol

    The beta glucan in oats enters the intestine, absorbs water and swells, absorbs cholesterol and bile, and wraps up excess fat and cholesterol in the intestine, reducing its absorption by the body.     In Ice Cream:

    Oat beta-glucan powder can be used as a thickener and stabilizer in the production of ice cream. The addition of 0.2% oat β-glucan to low-fat ice cream resulted in better ice cream texture, better melt resistance, and improved ice cream expansion and viscosity.

     

    In Dairy Products:

    Oat beta-glucan powder can thicken, viscosity, stable nature in an acidic environment and improve the organoleptic properties of the product. Liang Ying et al. added oat beta-glucan to yoghurt for testing and found that yoghurt with added oat beta-glucan had a smooth texture, delicate taste and milky flavour, and had good organoleptic properties. Oat β-glucan is a viscous polysaccharide, so adding it to yoghurt increases its viscosity and has a thickening effect. Yoghurt contains a large number of probiotics that are beneficial to intestinal health and the overall environment is acidic, but oat beta glucan is stable in yoghurt, with little change in water-holding capacity and viscosity over the shelf-life of the content.

     

    Oat beta glucan powder can also be used as a fermentation substrate for probiotics such as bifidobacteria and lactobacilli. Jia Jianbo used oats and skimmed milk powder as the main raw materials to make oat bio-milk containing active ingredients with health care functions.
